spinach artichoke dip

ok, so i made this spinach/artichoke dip last night for leary's potluck and it went over pretty well. its not vegan, but if you're not a vegan then its all good!

1 bunch/bag spinach
1 6 oz jar artichoke hearts
1 cup shredded mozzarella cheese
3 cloves garlic
1 cup sour cream
1 tablespoon lemon juice or to taste
1 teaspoon pepper or to taste
1 teaspoon vegetable broth powder
2 tablespoons parmasean cheese
olive oil

mince garlic and saute in pan with olive oil. add spinach and cook till wilted.
rinse off artichoke hearts.
place spinach/garlic/artichoke hearts in a food processor.
add sour cream, lemon juice, pepper, and vegetable broth powder.
blend.
then add mozzarella cheese.
blend again.
adjust flavor as desired with more or less pepper/lemon juice. i also added a pinch of garlic powder to counteract the lemon. feel free to wing it... thats what i did!!
then place in baking dish.
sprinkle parmasean cheese and any leftover mozzarella on top.
bake in oven for about 15 minutes at 350 degrees F.

serve with homemade pita chips or favorite bread! makes a great potluck treat!!!
if you are going to have a big party i strongly suggest doubling the recipe though.
