Stats from Mark Bittman's interview on the Colbert Report:
  • 1/5 to 1/6 of all worldwide greenhouse gases are produced by industrialized livestock production.
  • On average, each American eats 30 other animals per year.
  • Serving steak to a family of 4 has the same environmental impact as turning on all the lights in the house, then driving around in a SUV for 3 hours.
  • If each American ate 3 fewer cheeseburgers per week, it would have the same environmental impact as taking all SUVs off the road.
Bittman just finished his book Food Matters, a how-to guide for the environmentally conscious eater.
